Buttermilk Pancakes A-Plenty - cooking recipe

Ingredients
    4 c. sifted all-purpose flour
    6 eggs, separated
    3 tsp. baking powder
    3 tsp. baking soda
    1 tsp. salt
    4 1/2 c. buttermilk or 3 c. low-fat milk with 2 Tbsp. vinegar and 1 1/2 c. water
    4 Tbsp. oil
    2 to 3 Tbsp. sugar
Preparation
    Sift flour with baking powder, baking soda and salt; set aside. Separate eggs.
    Beat egg whites until stiff.
    Add oil and sugar to yolks; mix with mixer.
    Add flour mixture along with buttermilk to beaten yolks.
    Fold in egg whites; bake on hot griddle or use for waffles.
    There will be lots; save leftover batter for the next day.
