Eggplant Parmesan - cooking recipe
Ingredients

1 or 2 small eggplant
1/2 lb. hamburger
1/2 lb. sausage
2 medium onions
1 rib of celery
1 can stewed tomatoes
Cheddar, Mozzarella or Monterey Jack cheese
Preparation

Peel, cube, steam eggplant until tender.
Saute hamburger, sausage, onion (chopped) and celery sliced thinly.
Mix together in casserole with stewed tomatoes.
Top with lots of Cheddar, Mozzarella or Monterey Jack cheese.
Bake at 350\u00b0 for 30 minutes.
