Healthy Muffins - cooking recipe
Ingredients

1 1/2 c. rolled oats
1/2 c. all-purpose flour
3 Tbsp. Oat Bran
1 tsp. ground cinnamon
1/4 tsp. salt (optional)
1/3 c. chopped dates
1 c. skim milk
2 slightly beaten egg whites
3/4 c. whole wheat flour
1/2 c. packed brown sugar
1/2 tsp. baking powder
3/4 tsp. baking soda
1/3 c. raisins
1/4 c. chopped nuts
1/4 c. cooking oil
Preparation

In large bowl, combine oats, flours, brown sugar, Oat Bran, baking powder, cinnamon, baking soda and salt; mix well.
Add raisins, dates and nuts.
Stir to coat with flour mixture.
Add milk, oil and egg whites; stir just until moistened (batter will be lumpy).
Lightly grease 12 muffin cups.
Spoon batter into cups, filling cups full.
Bake at 400\u00b0 for 18 to 20 minutes, or until done.
Cool slightly; remove from pan.
