Tomato Tofu Pie - cooking recipe

Ingredients
    1 medium onion, chopped
    1 Tbsp. oil
    1 c. spaghetti sauce
    1/2 tsp. or less salt
    dash of pepper
    1 lb. firm tofu, drained, patted dry with towel and chopped in small pieces
    6 oz. part-skim Mozzarella cheese, grated
    2 Tbsp. chopped fresh parsley
    9-inch pie crust (optional)
Preparation
    Saute onion in oil.
    Add sauce, salt and pepper; stir 5 minutes.
    Remove from heat and add tofu and most of the cheese (save some for top).
    Stir together and pour into a 9-inch round baking dish or pie crust.
    Top with remaining cheese.
    Sprinkle with parsley.
    Bake at 350\u00b0 for 20 to 30 minutes.
