Jambalaya - cooking recipe

Ingredients
    1 1/2 lb. sausage
    1 lb. bulk chicken, cooked
    3 Tbsp. oil
    1 medium onion, chopped
    3 Tbsp. flour
    1 clove garlic, chopped
    1/3 c. green pepper
    2 c. water
    2 c. raw rice
    2 c. stewing tomatoes
    2 tsp. parsley
    1/3 c. onion tops
    1 1/2 tsp. salt
Preparation
    Brown sausage.
    Cube chicken; set aside.
    Fry onion in oil. Add flour; cook until flour is brown.
    Add water and all ingredients; bring to a boil.
    Lower heat; cover.
    Raise lid occasionally to stir, but not too often.
    Cook until rice is tender, about 45 minutes.
    Serves 4.
