Waldorf Brown Rice Salad - cooking recipe
Ingredients

2 c. cooked brown rice
3 Golden or Delicious apples
2 Tbsp. lemon juice
1/2 c. chopped celery
1/4 c. chopped walnuts
1/2 c. raisins
1/2 c. fat-free mayonnaise
1/2 c. vanilla nonfat yogurt
Preparation

Prepare rice according to package directions (without butter or salt).
Cool.
Wash, core and slice apples coarsely, without peeling.
Sprinkle apples with lemon juice and toss.
Add cooked rice, celery, nuts and raisins.
Blend well.
Fold mayonnaise into yogurt.
Add to rice mixture.
