Fish Fillet - cooking recipe

Ingredients
    fish fillets
    2 c. pancake mix
    2 1/2 c. club soda
    buttermilk
    lemon rind
    flour
Preparation
    Soak fish fillets in buttermilk 2 to 3 hours with lemon rind on\ttop.
    Drain. Mix pancake mix and club soda, then dip floured fillets
    in
    the
    mix
    and deep fry in 1 1/2 pints hot vegetable oil for about 4 minutes on each side.
