Shrimp In Cognac And Cream(Rich) - cooking recipe

Ingredients
    2 1/2 lb. raw shrimp, shelled and deveined
    5 Tbsp. butter
    3/4 c. cognac
    4 egg yolks
    3/4 c. heavy cream
    salt and pepper
    nutmeg
Preparation
    Split cleaned shrimp down backs without cutting all the way through.
    Melt butter in a large skillet. Add shrimp and saute over medium heat for about 5 minutes or until pink.
    Season shrimp with salt, pepper and nutmeg to taste.
    Heat cognac in a small pan.
    Ignite and pour over shrimp.
    Tilt the pan back and forth until the flames die down.
    Simmer the shrimp over low heat for about 5 minutes and remove pan from heat.
    Beat egg yolks and heavy cream and gradually stir mixture into pan juices. Reheat pan, if necessary. Do not let sauce boil!
    Serve over wild rice. Serves 6.
