Ingredients

7 c. sugar
4 c. water
6 c. vinegar
5 to 7 lb. beets
1 tsp. allspice
1 tsp. cinnamon
1 tsp. cloves
1 tsp. salt
1/2 tsp. mustard seed
1 tsp. black pepper
Preparation

Boil beets until tender.
Slip skins off in cold water.
Keep beets hot in warm oven.
Heat liquid to boiling.
Pack beets in hot jars, pour liquid over and seal.
