Sweet Potato Souffle - cooking recipe
Ingredients

2 c. mashed, cooked sweet potatoes
1/4 c. margarine
2 eggs
1 c. sugar
1/4 c. flour
1/2 c. melted margarine
1 egg, beaten
1 (8 oz.) can crushed pineapple, partially drained
1 tsp. vanilla extract
1/2 c. sugar
1/4 c. milk
Preparation

Combine warm sweet potatoes with 1/4 cup margarine, milk, 2 eggs, 1 cup sugar and vanilla in mixer bowl.
Beat until smooth. Spoon into shallow baking dish.
Combine 1/2 cup sugar and flour with 1/2 cup melted margarine in mixer bowl and mix well.
Add pineapple and 1 egg; mix well.
Spread over casserole.
Bake at 350\u00b0 for 30 minutes.
Yields 8 servings.
