Shrimp And Okra Gumbo - cooking recipe

Ingredients
    1/4 c. oil
    4 lb. fresh okra, cut in 1/2-inch pieces
    1 tomato, peeled and chopped
    2 onions, chopped
    2 qt. water
    salt, black and cayenne pepper to taste
    3 lb. peeled and deveined shrimp
Preparation
    In oil, cook okra, tomato and onions until okra is no longer ropy, about 45 to 60 minutes.
    Add water, salt, black pepper and cayenne pepper and simmer for 30 minutes.
    Add shrimp and continue to cook another 10 minutes; serve in soup bowls over cooked rice. Yields 6 servings.
    Tastes better if refrigerated and eaten on 2nd day.
