Sole Thermidor - cooking recipe

Ingredients
    2 lb. fish
    2 Tbsp. butter
    2 tsp. salt
    1/2 tsp. seasoned salt
    1/8 tsp. pepper
    1 1/4 c. milk
    3 Tbsp. butter
    3 Tbsp. flour
    1 c. grated Cheddar
    3 Tbsp. sherry
    paprika
Preparation
    Preheat oven to 350\u00b0.
    In 1-quart saucepan, melt 2 tablespoons butter; brush over sole.
    Sprinkle with seasoning.
    Roll up each fillet and place seam side down in greased shallow baking pan. Melt milk, 3 tablespoons butter and flour and stir.
    Pour 1/2 cup of mixture over fillets and bake for 25 minutes.
    Melt cheese, sherry and paprika and stir; after baking fish, pour the remaining milk mixture into cheese mixture and pour over fish, broiling until brown.
