Pizza Pronto - cooking recipe

Ingredients
    1 (20 1/2 oz.) store bought refrigerated cheese pizza (crust plus separate pkg. of tomato sauce and shredded Mozzarella cheese)
    1 Tbsp. olive oil
    2 large zucchini, thinly sliced (about 4 c.)
    1/4 tsp. freshly ground black pepper
    1/8 tsp. salt
    4 1/2 oz. thinly sliced pepperoni
    1 small roasted red pepper from 7 oz. jar, coarsely chopped
Preparation
    Heat oven to 425\u00b0.
    Spread pizza sauce over crust to within 1-inch of edge.
    Sprinkle with three quarters of cheese.
    Place in oven according to package directions.
    Bake for 7 minutes. Meanwhile, in 12-inch skillet over medium high heat, heat oil. Add zucchini, pepper and salt.
    Cook uncovered for 3 minutes until zucchini are almost tender, uncovering to stir twice.
    Remove pizza from oven, maintaining oven temperature.
    Using slotted spoon, spoon zucchini over pizza, alternating with pepperoni slices.
    Sprinkle with remaining cheese and chopped roasted red pepper.
    Bake for 3 to 4 minutes until cheese melts.
