Farmers Breakfast - cooking recipe

Ingredients
    1/4 c. margarine
    1/4 c. diced onion
    3 medium potatoes, cut into 3/4-inch cubes
    12 oz. chopped ham, cut into 3/4-inch cubes
    6 eggs
    1/2 tsp. salt
    1/4 c. shredded sharp Cheddar cheese
Preparation
    Saute onion and potatoes in large skillet, in hot margarine until potatoes are slightly browned.
    Cook, covered, 15 minutes or until potatoes are almost tender.
    Stir in ham cubes.
    Beat eggs with salt; pour over potato mixture.
    Cook over low flame, occasionally slip spatula underneath potatoes and ham to let uncooked egg flow to bottom.
    When eggs are set, sprinkle with cheese; cover skillet a minute or until cheese is melted.
    Makes 6 servings.
