Irish Stew(Stobhach Gaelach) - cooking recipe

Ingredients
    3 lb. lean mutton chops
    2 lb. potatoes
    1 lb. onions
    carrots (optional)
    1 Tbsp. chopped parsley
    1 pt. mutton stock
    salt and pepper
Preparation
    Cut meat into fairly large pieces.
    Layer meat and vegetables in a deep pan, seasoning each layer.
    Place potatoes on top. Add stock.
    Cover and cook slowly for 1 1/2 to 2 hours at 300\u00b0.
