Ingredients

2/3 c. rice
2 1/4 c. water
2/3 c. sugar
2 Tbsp. cornstarch
1/2 tsp. salt
2 2/3 c. half and half
2 Tbsp. butter
1 tsp. vanilla
2 eggs (4 egg yolks)
Preparation

In medium saucepan, bring rice and water to a boil.
Simmer, covered, until rice is tender and most of the water absorbed, 25 minutes.
In a small bowl, stir together cornstarch, sugar and salt.
Stir into hot rice mixture with half and half.
Stirring constantly, bring to a boil and boil 1 minute.
Take off the heat and stir in butter and vanilla.
Stir some hot rice into beaten eggs, then add to saucepan.
Cook over moderate heat, stirring often, until mixture starts to bubble.
