Dutch Potatoes(1883) - cooking recipe
Ingredients

1/2 doz. medium sized potatoes, washed and dried
2 well beaten eggs
1 Tbsp. cream
salt and pepper to taste
bit of butter (size of hazelnut)
bread crumbs
Preparation

Cut off the least bit of each end of potato (to stand up). Make the cut in half crosswise.
Scrape out the insides and mash with eggs, cream, salt and pepper. Return to shells.
Sprinkle bread crumbs over them and to each shell add a bit of butter the size of a hazelnut. Brown in hot oven.
