Texas Corn Bread - cooking recipe
Ingredients

1 c. yellow corn meal
1/2 tsp. salt
2 tsp. baking powder
2 eggs, beaten
1 (8 1/2 oz.) can cream-style corn
3/4 c. buttermilk
1/4 c. bacon drippings
1 1/2 c. shredded Cheddar cheese
1/4 c. finely chopped, seeded jalapeno peppers
Preparation

Preheat oven to 375\u00b0.
Grease 9 x 9-inch baking pan.
In large bowl, combine corn meal, salt and baking powder.
In medium bowl, with a fork, beat together two eggs, corn, buttermilk and bacon drippings.
Pour all ingredients together and stir until moistened.
Pour 1/2 of the batter into prepared pan.
Sprinkle with cheese and peppers; top with remaining batter.
Bake 35 to 40 minutes, until golden.
Serve warm.
