She-Crab Soup - cooking recipe

Ingredients
    4 oz. mayonnaise
    1 small onion, finely diced
    2 stalks celery, finely diced
    2 small carrots, finely diced
    3/4 c. flour
    2 qt. skim milk
    1 1/8 tsp. white pepper
    8 oz. crab meat
    1/2 oz. crab base
    1/2 tsp. Old Bay seafood seasoning
    hot pepper sauce to taste
    1/4 c. sherry or to taste
Preparation
    Saute vegetables in mayonnaise until onion is translucent. Add flour to mixture and brown lightly.
    Add skim milk and whip to break up lumps of flour.
    Add remaining ingredients and cook, stirring until to the desired consistency.
