Carrot Cake - cooking recipe
Ingredients

3 eggs
2 1/4 c. sugar
1 1/2 c. oil
2 c. finely grated carrots
1 c. crushed pineapple
1 c. flaked coconut
2 c. flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
1 c. chopped nuts
1 tsp. vanilla
Preparation

Beat eggs, sugar and oil well.
Add carrots, pineapple and coconut.
Sift dry ingredients together and add with nuts and vanilla.
Mix well.
Bake in ungreased rectangular pan at 350\u00b0 for 50 minutes.
Turn oven off, but do not remove cake for 10 minutes. Good frosted or un-!
