Cauliflower Pickles - cooking recipe

Ingredients
    10 c. cauliflower flowerets
    1 medium onion, thinly sliced
    1 medium red pepper, chopped
    2 c. white vinegar
    2 c. water
    2 c. sugar
    1 Tbsp. pickling salt
    1 Tbsp. mustard seed
    1 Tbsp. mixed pickling spice
Preparation
    Combine ingredients in large pot.
    Bring to boil, stirring. Reduce heat, cook 10 minutes, stirring.
    Fill hot jars, leaving 1/2-inch space.
    Adjust lids.
    Process for 15 minutes in boiling water bath.
    Yields 4 to 5 pints.
