Red Beet Chocolate Cake - cooking recipe
Ingredients

1 3/4 c. sifted flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
1 c. vegetable oil
3 eggs
1 1/2 c. pureed cooked beets (about 1 lb. raw beets)
2 oz. unsweetened chocolate, melted and cooled
1 tsp. vanilla
whipped cream or White Mountain Frosting
Preparation

Preheat oven to 350\u00b0.
Grease and flour 2 (9-inch) cake pans. Sift together the flour, soda and salt; set aside.
Beat together the sugar, oil and eggs for 2 minutes.
Beat in the beets, melted chocolate and vanilla.
On low speed, gradually stir in the flour mixture.
Spoon into prepared cake pans and bake about 25 minutes. Cool in pans 10 minutes, then turn out onto cake racks and cool completely.
Spread whipped cream or frosting between layers and all over cake.
