Fireside Potatoes - cooking recipe

Ingredients
    4 c. cooked potatoes, diced (about 6 medium potatoes)
    2 c. sliced onions
    2 Tbsp. minced parsley
    2 Tbsp. chopped pimento
    1/2 tsp. salt
    1/4 c. oil
Preparation
    Combine potatoes, onions, parsley and pimento.
    Add seasoning. Brown in hot oil until golden brown and crisp.
    Sprinkle with cheese.
