Honey-Whole Wheat Bread - cooking recipe

3 c. stone-ground whole wheat or graham flour
1/3 c. honey
1/4 c. shortening
1 Tbsp. salt
2 pkg. regular or quick-acting active dry yeast
2 1/4 c. very warm water (120~ to 130~)
3 to 4 c. all-purpose or unbleached flour
Preparation

Mix whole wheat flour, honey, shortening, salt and yeast in a 4-quart bowl; add warm water.
Beat on low speed, scraping bowl frequently, 1 minute.
Stir in enough all-purpose flour, 1 cup at a time, to make dough easy enough to handle.
