Berlin Scalloped Potatoes - cooking recipe

4 slices bacon
1 medium onion
1 (10 oz.) frozen spinach, thawed and chopped
1 (5 oz.) pkg. scalloped potatoes
grated Mozzarella cheese
Preparation

Cook bacon until crisp.
Drain and save 2 tablespoons drippings.
Cook onion in drippings until tender.
Add spinach and heat through.
In a 10 x 6 x 2-inch baking dish, combine dry sauce mix, water and milk according to box directions.
Omit butter. Stir in potatoes, bacon and spinach mixture.
Bake, uncovered, in 400\u00b0 oven for 30 minutes or until potatoes are tender.
Sprinkle with cheese.
Cook 2 or 3 minutes longer.
Let stand 5 to 10 minutes.
