Eggplant Casserole - cooking recipe

Ingredients
    eggplant
    1 small onion
    1 egg
    1 c. Post Toasties
    1/2 green pepper, chopped
    1 c. grated cheese
    salt and pepper to taste
Preparation
    Peel and boil eggplant with the onion until tender.
    Drain and mash.
    Mix.
    Bake for 10 minutes.
    Sprinkle 1/2 cup cheese on top.
