High Plain Hash - cooking recipe
Ingredients

2 Tbsp. vegetable oil
1 Tbsp. butter
1 1/2 c. diced potatoes
1 1/2 c. diced onion
1 c. diced red bell pepper
1 to 2 jalapenos, minced
4 c. shredded barbecued brisket or roast
3/4 c. beef stock
1 Tbsp. prepared mustard
1 Tbsp. black pepper
salt to taste
Preparation

Warm oil and butter together in heavy skillet over medium heat.
Add potatoes, onion, bell pepper and jalapeno and saute 10 minutes.
Mix in remaining ingredients.
Simmer, covered, 10 minutes, stirring mixture up from the bottom once every 6 or 7 minutes and patting it back down.
