Pickled Peaches Or Pears - cooking recipe

Ingredients
    1 qt. vinegar
    6 lb. sugar
    12 lb. peeled fruit (6 qt.)
    1 spice bag (1 Tbsp. ground cloves and 1 piece ginger root)
Preparation
    Make a syrup of vinegar and sugar.
    Add spice bag and 4 to 5 whole sticks of cinnamon to syrup.
    Slowly add peaches into the boiling syrup.
    Cook until the fruit can be pierced with a broom straw.
    Let stand in a covered kettle overnight.
    The next day, pack into jars to 1/2 inch of top of jar.
    Cover with syrup.
    Put on tops tightly.
    Process in water bath for 20 minutes.
