Shrimp With Herbed Jalapeno Cheese - cooking recipe

1 lb. peeled and deveined shrimp
1 garlic clove, minced
2 Tbsp. minced fresh coriander
8 oz. cream cheese, softened
2 pickled jalapeno chilies, seeded and chopped
Preparation

Plunge shrimp into large saucepan of boiling lightly salted water and cook for about 45 seconds, or until they turn pink. Drain, refresh under cold water; pat dry.
In food processor or blender, blend cream cheese, garlic, chilies, coriander, salt and pepper to taste until smooth.
Transfer to bowl and chill for about 30 minutes, until firm.
Transfer the mixture to a pastry bag fitted with a small star tip and pipe it into the slit of each shrimp.
Chill shrimp on a plate for 1 hour.
Makes 25 hors d'oeuvres.
