San Juan Squash - cooking recipe

Ingredients
    3 medium yellow crookneck squash or zucchini
    6 slices bacon
    1/3 c. chopped onions
    1/2 c. dry bread crumbs
    1 Tbsp. butter or margarine
    1 tsp. salt
    1 tsp. chili powder
Preparation
    Slice squash in half lengthwise and scoop out seeds.
    Parboil for 10 minutes.
    Put in single layer in shallow pan; sprinkle with salt (chili powder also), chopped onion and bread crumbs.
    Top each half with bacon slice or cooked carne adobado.
    Bake at 350\u00b0 with water just to cover bottom of pan until squash is tender and bacon is browned.
    Serves 4 to 6.
