Chicken Cacciatore - cooking recipe

4 to 5 lb. roasting chicken, cut in serving pieces
4 Tbsp. olive oil
1 large onion, coarsely chopped
1/2 c. flour
1 Tbsp. salt and pepper
2 c. canned tomatoes
2 medium green peppers, chopped
1 clove garlic
1/2 c. chicken broth
1/4 tsp. each: marjoram, oregano, basil and rosemary
Preparation

This is one of the most popular Italian chicken dishes.
Put 1/2 of the olive oil in a large casserole over low heat and cook onions until soft.
Roll chicken pieces in flour, salt and pepper. Skim out onions and reserve.
Add remaining oil to casserole. Brown chicken and return onions.
Add tomatoes, pepper, garlic and herbs.
Cover closely and simmer over low heat, about 1 hour, or until chicken is very tender.
