Potato Cakes - cooking recipe

Ingredients
    3 c. leftover mashed potatoes (room temperature)
    approximately 3/4 c. self-rising flour (make batter slightly stiff)
    2 eggs, beaten
    salt and black pepper to taste
Preparation
    Mix ingredients.
    Heat 2 sticks butter or margarine in skillet.
    Drop by teaspoon into hot margarine.
    Fry until golden brown on both sides.
    Drain on paper towels and serve at once.
