Carrot Slaw - cooking recipe

Ingredients
    1 lb. carrots, skinned and grated or shredded to make 3 c.
    1/2 c. mayonnaise
    1 Tbsp. lemon juice
    1/3 c. coconut flakes
    1/3 c. currants or raisins (optional)
    1 tsp. sugar or more to taste
    1/2 tsp. cinnamon
Preparation
    In a bowl, combine carrots, mayonnaise, lemon juice, coconut, currants (if using) and sugar.
    Add cinnamon and toss with fork. Refrigerate a few hours; toss and serve.
