Mediterranean Vegetables - cooking recipe

Ingredients
    1 small eggplant (1 lb.), cut into pieces
    1 tsp. olive oil
    1 c. chopped onion
    2 c. green bell pepper
    1 c. cherry tomato halves
    1/2 c. mushrooms
    6 black olives
    2 Tbsp. red wine vinegar
    2 Tbsp. catsup
    1 Tbsp. minced garlic
    1/2 c. coarsely crumbled Feta cheese
Preparation
    Put eggplant in a 2-quart microwave-safe dish.
    Cover and microwave 6 minutes on High.
    Put oil, onions and peppers in same dish.
    Stir to mix; cover and microwave on High 4 or 5 minutes. Stir in eggplant and remaining ingredients, except Feta Cheese. Cover and microwave on High 6 to 8 minutes.
    Sprinkle cheese over top.
    Cover and let stand 5 minutes.
    Serves 6.
