Black Bean Soup - cooking recipe

Ingredients
    1/2 c. red pepper
    1/2 c. celery
    1/2 c. carrot
    3/4 c. onion
    1/4 c. mushrooms
    2 cans black beans
    3 bouillon cubes
    dark beef stock
    1 can tomatoes
    4 cloves garlic
    Cajun seasoning mix
Preparation
    Make a dark roux (1/4 cup flour and 1/4 cup oil).
    When dark, add finely chopped red pepper, celery, carrot, onion and mushrooms.
    Cook until just done, then add black beans, bouillon cubes, dark stock, tomatoes, garlic, salt and Cajun seasoning to taste.
