Zucchini-Corn Bake(This Is An Original Recipe, Developed July 1988) - cooking recipe

Ingredients
    2 lb. small zucchini, washed and sliced medium
    1 large onion, chopped
    1 Tbsp. margarine
    4 ears sweet corn, cut from cob
    1 Tbsp. margarine and water
    salt and pepper to taste
    3 oz. Durkee real French fried onions
    grated Parmesan cheese
Preparation
    Cook zucchini and onion in margarine in large skillet with lid, slowly.
    Cook corn in margarine with just enough water to obtain doneness, until water evaporates.
    Combine in shallow baking dish; sprinkle with French fried onions and Parmesan cheese.
    Preheat oven to 400\u00b0 and bake quickly, about 5 minutes, watch to see that onion topping is not too done (burned!).
    Serve as a main dish or side dish with chicken, etc.
    Makes 4 to 6 servings.
