Minestrone Soup - cooking recipe
Ingredients

1 c. dried lima beans, soaked for several hours
1/2 c. diced salt pork or bacon
1 small diced onion
1 c. diced Irish potatoes
2 Tbsp. minced parsley
1 clove garlic, mashed
1 c. shredded cabbage
salt and pepper to taste
1 c. fresh or canned tomatoes
1/2 c. diced carrots
1/2 c. spaghetti or elbow macaroni
1/2 c. diced celery
8 beef bouillon cubes
Preparation

Brown pork, onion and garlic lightly.
Add all ingredients except macaroni, salt and pepper.
Add 2 quarts hot water. Cover and simmer (not boil) 1 1/2 to 2 hours.
Add macaroni, salt and pepper.
Let simmer 30 minutes.
Serve sprinkled with Parmesan cheese and hot chunks buttered French bread.
