Southwestern Spoon Bread - cooking recipe
Ingredients

1 can (16 1/2 oz.) creamed corn
1 c. yellow corn meal
3/4 c. milk
1/3 c. vegetable oil
2 eggs, lightly beaten
1 tsp. baking powder
1/2 tsp. salt
1 can (4 oz.) chopped green chilies
1 c. shredded Cheddar cheese
Preparation

In mixing bowl, stir together all ingredients except last two. Pour batter into greased 2-quart baking dish.
Sprinkle with chilies and cheese.
Pour remaining batter over all.
Bake at 375\u00b0 for about 45 minutes or just until set.
Serve warm with a spoon. Good with enchiladas.
