Smothered Liver - cooking recipe
Ingredients

1 lb. beef or calf liver, thinly sliced
2 or 3 large onions, coarsely chopped
1 c. self-rising flour
1 Tbsp. paprika
1 tsp. salt
1/2 tsp. pepper
2 Tbsp. oil
1/2 c. water
Preparation

Mix flour, salt, pepper and paprika.
Dip liver in flour. Brown liver at high heat, then set aside.
Brown remaining flour in skillet, then add onions and cook until the onions are clear. Add water and liver and cook, covered, about 10 to 20 minutes. Serve over rice or mashed potatoes.
