Chile Relleno Casserole - cooking recipe

Ingredients
    6 beaten eggs
    3/4 c. (24 oz.) cottage cheese
    1 (4 oz.) can Ortega green chiles, chopped
    3/4 c. shredded Jack cheese
    3/4 c. Cheddar cheese, mild and sharp mixed
    3/4 c. finely crushed Ritz crackers (18)
    1 can mushroom soup
Preparation
    Combine eggs, cottage cheese, cracker crumbs, chiles, 1/2 cup shredded cheese and turn into 8 x 12-inch greased dish.
    Bake at 350\u00b0 for 45 minutes or until set.
    Sprinkle remaining cheese and bake 3 minutes more.
    Let stand 5 minutes.
    Makes 6 servings. Heat undiluted mushroom soup and put spoonful on top of each serving.
