Italian Mashed Potato Casserole - cooking recipe

Ingredients
    3 lb. potatoes, peeled
    3 Tbsp. butter
    3 1/2 to 4 oz. shredded Mozzarella cheese
    1/2 c. grated Parmesan
    1 1/2 oz. thinly sliced, chopped Prosciutto or ham
    2 large eggs, beaten
    3/4 Tbsp. chopped parsley
    3/4 tsp. salt
    1/16 tsp. pepper
    plain bread crumbs
    butter
    paprika
Preparation
    Boil, then mash potatoes.
    Add butter and whip.
    Add salt, pepper and parsley to the beaten eggs.
    Add egg to potatoes and whip.
    Fold in Prosciutto, Mozzarella and Parmesan.
    Butter a 3-quart casserole with 1 tablespoon butter and then sprinkle with plain bread crumbs.
    Turn the potato mixture into the casserole dish.
    Sprinkle with bread crumbs and a light sprinkle of paprika and dot with butter.
    Bake at 350\u00b0 for 1/2 hour until golden on top.
