Indian Fried Eggplant - cooking recipe
Ingredients

1 medium (1 1/2 lb.) eggplant
1 c. flour
1 tsp. baking powder
1 tsp. salt
2 tsp. curry powder
1 c. milk
1 egg
1/2 c. salad oil
Preparation

Wash eggplant.
Beat remaining ingredients with beater until smooth.
Heat oil to 375\u00b0 in a skillet.
Slice eggplant into 1/4-inch slices.
Dip slices into batter.
Let excess drip off. Fry in hot oil until golden brown.
