Sweet Potato Swirl - cooking recipe

Ingredients
    4 medium sized sweet potatoes
    2 eggs
    1/4 c. margarine
    2 Tbsp. margarine, melted
    2 Tbsp. milk
Preparation
    Peel sweet potatoes and cut into quarters.
    Cook potatoes in a large covered saucepan with a small amount of boiling water. Water can be lightly salted.
    Cook until potatoes are tender (15 to 20 minutes).
    Drain.
    Transfer sweet potatoes into a large mixing bowl.
    Beat with an electric mixer on low speed for about 2 minutes.
    Add margarine, salt and pepper to taste.
