Indian Rice - cooking recipe
Ingredients

2 Tbsp. butter
1/4 c. finely chopped onions
1 c. converted rice
1 1/2 c. fresh or canned chicken broth
1/4 c. golden raisins
1 tsp. grated lemon
1 bay leaf
1/4 tsp. Tabasco
1/2 tsp. steam saffron
salt and freshly ground pepper
Preparation

In a heavy saucepan with a tight fitting lid, melt 1 tablespoon of butter and add onions.
Cook, stirring until wilted. Add rice and cook, stirring about 30 seconds.
Add broth, raisins, lemon, bay leaf, saffron, Tabasco, salt and pepper. Bring to a boil.
Simmer over low heat for 17 minutes.
Uncover and remove bay leaf.
Add remaining butter and stir to fluff the rice well.
Yield: 4 servings.
