Michigan Potato Candy - cooking recipe

Ingredients
    2/3 c. mashed potatoes
    3 1/2 c. powdered sugar
    2 tsp. vanilla
    2 (12 oz.) pkg. chocolate chips
    4 c. Angel Flake coconut
Preparation
    Mix mashed potatoes, powdered sugar, vanilla and coconut thoroughly.
    Shape into desired balls.
    Place in refrigerator or until very cold.
    Roll candy balls in melted chocolate chips. Refrigerate until firm.
    Makes about 48 candies.
