Dried Peaches - cooking recipe

Ingredients
    1 gal. chopped unpeeled peaches (1/2 basket)
    1 c. vinegar
    3 1/2 c. sugar
Preparation
    Slice green tomatoes thick.
    Place slices in jars.
    Put 1 teaspoon salt in each quart jar or 1/2 teaspoon for pints.
    Cover with cold water to 1/2 inch of the top and seal.
    Boil in hot water bath for 20 minutes.
    When ready to use, drain, dip each piece in flour and fry in skillet of hot shortening or oil.
    Turn once.
