Apricot Or Peach Leather - cooking recipe

Ingredients
    1 gal. pitted fruit
    1 1/2 c. unsweetened pineapple juice
    1/4 c. mild flavor honey or to taste
    3 tsp. almond extract (optional)
Preparation
    Cook fruit until soft. Puree in blender. Pour on oiled baking pan. Spread out to 1/4-inch and dry in low oven. After puree is dry, pull sheet from pan in a solid layer. Place leather on wax paper dusted with cornstarch or arrowroot to finish drying. Roll up and store.
