Overnight Coleslaw - cooking recipe

Ingredients
    1 small head cabbage, chopped
    1 1/2 c. sugar
    2 tsp. salt
    1 jar (2 oz.) chopped pimentos, drained
    1 small onion finely chopped
    1 c. vinegar
    1 tbsp. celery seed
Preparation
    Mix finely chopped onion with sugar, vinegar, salt and celery seed until thoroughly mixed (in food processor if available). Gradually add pimiento and chop in processor 4 or 5 times (lightly) or chop by hand and add to mixture.
    Pour mixture over cabbage, stir until evenly coated.
    Allow to marinade, cover, in refrigerator 8 hours.
    Stir slaw and drain off excess liquid.
