Broccoli Cheese Soup(For A Crowd) - cooking recipe
Ingredients

16 oz. pkg. chopped broccoli
4 medium potatoes, peeled and cubed
1 c. uncooked Minute rice
1 onion, chopped
1 or 2 Tbsp. butter
8 c. water
3 cans cream of mushroom soup
1 can Ro-Tel tomatoes (2 cans if you like it hotter)
2 1/2 c. Velveeta cheese, cubed
salt and pepper to taste
Preparation

Mix first 6 ingredients in soup pot. Simmer 25 to 30 minutes. Add remaining ingredients and heat, but do not boil.
