"Aunt" Tommy'S Chicken Soup - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 medium yellow onion, diced
    3 to 4 garlic cloves, minced
    3 large carrots, quartered and diced
    6 celery ribs, halved and diced
    1 (8 oz.) can water chestnuts, sliced
    4 Tbsp. dried basil
    3/4 tsp. diced red pepper flakes
    5 c. mushrooms, sliced
    3 medium-large red bell peppers, diced
    1 lb. (12) small red potatoes, cut into eights
    1 lb. boneless chicken breasts, cubed
    5 (14 1/2 oz.) cans full strength chicken broth
    2 Tbsp. Chinese hoisin sauce
    salt and pepper to taste
Preparation
    Combine olive oil and onion.
    Saute until golden brown.
    Add garlic and stir 3 minutes.
    Add carrots, celery, water chestnuts, basil and pepper flakes.
    Stir another 5 minutes.
    Mix in mushrooms, red pepper flakes and potatoes.
    Add chicken broth and hoisin sauce.
    Simmer 20 minutes or until potatoes are done.
